Roast Chicken

Most Delicious Roast Chicken of all Time

This is one of my all-time favourite recipes. I usually cook 1-2 of these chickens per week, and cut them into quarters so that I can take some to work or heat up for a quick dinner. It is so simple, but the spice rub makes for an absolutely amazing roast chicken.

Ingredients
·         1 large whole chicken (I usually use around 1.7kg – 3.7lbs)
·         1-2 clove garlic, crushed
·         2 tablespoons butter
·         1 lemon

Spice Rub
·         1 tablespoon salt
·         2 teaspoons Hungarian paprika
·         1 teaspoon thyme
·         1 teaspoon white pepper
·         ½ teaspoon cayenne pepper
·         ½ teaspoon garlic powder

Directions
·         Preheat oven to 180 degrees C (360 degrees F)
·         Place ingredients for spice rub into a container and shake until well combined
·         Gently lift the skin covering the chicken breast so that there is room underneath for a spoon (or your fingers if you cook like me). Be sure not to tear the skin
·         Melt butter and mix in garlic. Place this mixture in the space created by lifting the skin of the chicken. If you like, you can add some salt to this mixture for extra flavour
·         Cover the entire chicken in the spice rub. You can use as much or as little as you like. I sometimes have mixture left over, although I like a lot of spice on my chicken. Make sure you also rub some in the chicken cavity for extra flavour
·         Cut lemon in half and place inside of chicken cavity. If you like you can truss your chicken, however I never do
·         Cook chicken for around 1 hour. I check whether the chicken is ready by pricking the thickest part of the leg to see whether the juices run clear. If they do, you chicken is cooked
